Ingredients
- Leek - 4 pieces
- Onion - 1 piece
- Potato - 2 pieces
- Butter - 1.8 oz
- Salt - to taste
- Chicken Broth - 9 fl oz
- Ground Black Pepper - to taste
- Chives - 1½ tablespoons
- Sour Cream - 2 tablespoons
Step by Step guide
Step 1
Wash the leek, remove the tough outer layer, cut it lengthwise, and slice.
Step 2
In a large pot, melt the butter, add all the onion and potato, and stir to coat the vegetables in the butter. Season with salt and pepper. Cook on low heat for 15 minutes.
Step 3
Pour in the broth and milk, bring to a boil, cover, and simmer for 20–25 minutes.
Step 4
Transfer the soup to a blender and blend until smooth.
Step 5
Pour back into the pot.
Step 6
Before serving, sprinkle with chopped chives and garnish with sour cream.
