  • Leek - 2 lbs
  • Olive Oil - 6 fl oz
  • Red cocktail cherry - 12 pieces
  • Prunes - 12 pieces
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Red Grape Juice - 4 fl oz

Step by Step guide

Step 1

Slice the leeks into cylinders (only the white part) about 6 cm long. Rinse and let dry.

Step 2

Heat the olive oil in a saucepan, add the leeks, and cook, stirring, over medium heat for 20–25 minutes until the leeks begin to caramelize. Add the tomatoes and prunes. Season with salt and pepper to taste. Cover and simmer over low heat for 8–10 minutes until the vegetables and prunes are soft. If necessary, add red dry wine or water during cooking to prevent the mixture from burning.

Step 3

Drizzle the dish with olive oil and serve hot.
