- Coarse Salt - 2 tablespoons
- Sugar - 2 tablespoons
- Peeled Cooked Shrimp - 2 lbs
- Olive Oil - 2 fl oz
- Chopped Sage Leaves - 2 fl oz
- Citrus Zest Mix - 1 tablespoon
- Garlic - 3 cloves
- Ground Black Pepper - ½ teaspoon
Step by Step guide
Step 1
In a bowl, mix together sugar and salt, add the shrimp, and gently stir. Let sit for 45 minutes to 1 hour. Rinse under cold water and dry well. Return to a clean bowl.
Step 2
Preheat the grill. Brush the grill grate with oil.
Step 3
Add olive oil, parsley, lemon zest, minced garlic, and black pepper. Mix well and thread the shrimp onto wooden skewers, alternating so that the heads and tails face opposite directions.
Step 4
Place the shrimp on the grill and cook for 5-6 minutes, turning until the shrimp are cooked through. Serve with lemon wedges.
