Lemon-Ginger Iced Tea with Raspberry Ice
Ingredients
- Honey - 3 tablespoons
- Raspberry leaves - 5.1 oz
- Grated Ginger Root - 1.9 oz
- Rooibos Tea Bags - 6 pieces
- Lemon - 1 piece
- Meyer Lemon Juice - ½ cup
- Fresh Mint - to taste
Step by Step guide
Step 1
In each ice cube tray, place 4 raspberries and fill with cold water. Freeze.
Step 2
In a saucepan, combine honey, 2 cups of water, and finely chopped ginger. Bring to a boil, reduce heat, and simmer for 5 minutes. Remove from heat and add the tea bags. Let steep for 30 minutes to 1 hour, then strain.
Step 3
In a pitcher, mix the tea, 6 cups of cold water, and lemon juice. Chill in the refrigerator.
Step 4
Before serving, place 3 raspberry ice cubes in each tall glass and pour in the tea. Garnish with lemon slices and mint sprigs.
