Ingredients
- Lemon - 4 pieces
- Shrimp - 4 lbs
- Coriander essential oil - 0.7 oz
- Champagne Vinegar - 3 fl oz
- Olive Oil - 3 fl oz
- Sugar - 2 spoons
- Dried Chili Pepper - 1 piece
- Salt - 2 spoons
- Bay leaf - 1 piece
- Green peppercorns - 6 pieces
- Parsley - 1 bunch
Step by Step guide
Step 1
Grate the lemon zest, squeeze the lemon juice, and grind the coriander seeds in a mortar and pestle or a coffee grinder. Combine the zest, lemon juice, ground coriander, olive oil, sugar, a tablespoon of salt, crushed red pepper flakes, and about a shot glass of water (approximately 50 ml). The marinade is ready.
Step 2
In a pot of water, add a bay leaf, parsley, whole peppercorns, and a tablespoon of salt, then cook the shrimp in this mixture. Drain the water, remove the shrimp, and toss them with the marinade. Spread the shrimp out on a tray, large plate, or baking sheet, cover with plastic wrap, and refrigerate for eight hours. Serve cold with a green salad.
