Lenten Peasant Bean Soup
Ingredients
- Beans - 7.1 oz
- Potatoes - 3 pieces
- Rice - ¼ cup
- Onion - 1 piece
- Carrot - 1 piece
- Wheat Flour - 1 tablespoon
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
- Herbs - to taste
Step by Step guide
Step 1
In the evening, wash and soak the beans. Then boil until cooked, approximately 50-60 minutes.
Step 2
Peel, wash, and dice the potatoes.
Step 3
Peel and wash the onion and carrot. Dice the onion, and julienne or grate the carrot.
Step 4
Rinse the rice.
Step 5
In another pot, bring water to a boil, add the beans. Bring to a boil. In the pot with the cooked beans, add the potatoes, rice, half of the carrot, and onion. Cook for 20 minutes.
Step 6
Heat a skillet, add vegetable oil. Sauté the remaining carrot and onion until golden brown, stirring, for 4-6 minutes over medium heat.
Step 7
Add the flour, sauté, stirring, for 1 minute.
Step 8
Add the sautéed mixture to the soup. Season with salt and pepper to taste. Cook the bean soup with the sauté for 5-10 minutes.
Step 9
Wash and finely chop the herbs.
Step 10
Add the herbs to the soup.
