Lentil and Tomato Soup

Ingredients

  • Onion - 1 head
  • Poultry - 2 lbs
  • Carrot - 1 piece
  • Celery stalk - 2 stalks
  • Potato - 3 pieces
  • Lentils - 0.7 cups
  • Fresh basil leaves - 1 bunch
  • Baking Tomatoes - 1 can
  • Garlic - 1 clove
  • Mild Chili Spice - 1 piece
  • Olive Oil - 1 tablespoon

Step by Step guide

Step 1

Prepare the broth. In a large pot, pour 4 liters of water, add the chicken, and when the water boils, add the carrot, onion, and celery. Cook the broth until ready for 45 minutes.

Step 2

Crush the garlic, cut the chili in half, finely chop the tomatoes and basil. In a small pot, heat the olive oil, sauté the pepper and garlic until golden, then remove both ingredients.

Step 3

Add the tomatoes and basil to the pot, simmer for 4 minutes, add the lentils (I used a mix of red, black, yellow, and brown-green), add a ladle of broth, and simmer for another 15 minutes.

Step 4

Cut the potato into small cubes and add it to the lentils. Also, add another 1.5 liters of broth and cook until ready for about 20 minutes. Add salt and pepper to taste.

Step 5

Divide the chicken meat into pieces and add it to the soup. Optionally, sprinkle with herbs when serving.
