Description

I use a glass with a volume of 200 ml as a measurement. For cooking, I use a large saucepan or a small pot (2.5 liters). The cooking temperature is slightly above average, similar to that of a regular soup. Sometimes I replace vegetable broth with a seasoning mix, which is vegan, but still — check the ingredients. I simply bring water to a boil and add a teaspoon of the seasoning mix. I let it simmer for a couple of minutes.

Ingredients

  • Lentils - 14.1 oz
  • Onion - 1 head
  • Chicken Broth - 1 qt
  • Carrot - 1 piece
  • Safflower Oil - 1 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Mild Chili Spice - to taste
  • Wheat Flour - 0.2 oz

Step by Step guide

Step 1

Pour the sunflower oil into the bottom of the saucepan.

Step 2

Chop the onion and add it to the oil. The onion should become translucent and impart its flavor to the oil. But do not overcook it; it should not burn (this is not a sauté).

Step 3

Grate the carrot on a coarse grater and add it to the oil and onion. Cover with a lid, reduce the heat, and let it simmer for about 7 minutes.

Step 4

Rinse the lentils and add them to the saucepan for 1–2 minutes — let them steam a little.

Step 5

Now pour in the broth, leaving literally 30 ml. This is necessary to dissolve the flour. The thing is, if you just throw the flour into the soup, it will cook and turn into lumps.

Step 6

So first, it needs to be dissolved in a small amount of broth.

Step 7

Red lentils cook quickly. This will take a maximum of about 20 minutes. They will all break down, but this should not scare you, as we will blend everything in a blender anyway.

Step 8

Add salt and pepper to taste. But remember, if you used the seasoning mix, it is already salty. And in the case of homemade vegetable broth, remember — did you salt it?

Step 9

I use just a little chili pepper. A quarter of a pod, without seeds. But this ingredient is optional. It is used by those who enjoy a bit of spice.

Step 10

Pour in the dissolved flour. Stir well.

Step 11

All that’s left is to blend everything with a blender. Blend for a longer time until you achieve a creamy consistency.
