Ingredients
- Lentils - 7.1 oz
- Onion - 1 head
- Carrot - 1 piece
- Butter - 3.5 oz
- Mint - 1 tablespoon
- Red Long Chili Peppers - 1 teaspoon
- Meyer Lemon Juice - 3 tablespoons
- Salt - to taste
- Lemon - 3 slices
Step by Step guide
Step 1
Peel the onion and carrot.
Step 2
Slice the onion into half rings and dice the carrot.
Step 3
In a pot, melt the butter, add the onion and carrot, and sauté, stirring, for about 5 minutes.
Step 4
Thoroughly rinse the lentils under cold water until the water runs clear. Add them to the pot with the onion and carrot, pour in 1 liter of water, and bring to a boil.
Step 5
Reduce to low heat, cover with a lid, and cook for 15 minutes.
Step 6
When the lentils are soft, season the soup with salt, add the mint and red pepper, stir, and cook for another 1-2 minutes.
Step 7
Remove the soup from heat and blend it into a puree with a blender.
Step 8
Pour into bowls, add a slice of lemon or 1 tablespoon of lemon juice to each. Optionally, serve with croutons.
