Ingredients
- Lentils - 14.1 oz
- Couscous - 4 tablespoons
- Oranges - 2 pieces
- Onion - 1 piece
- Garlic - 1 clove
- Olive Oil - 5 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Soak the lentils according to the package instructions (or do not soak if your type does not require it).
Step 2
Heat olive oil in the bottom of a pot and sauté the finely chopped onion and garlic for 5 minutes.
Step 3
Meanwhile, bring 1.5 liters of water to a boil and, after 5 minutes, pour it into the pot. Add the lentils, cover with a lid, and simmer until almost cooked (about 50 minutes, but this depends on the variety and soaking time).
Step 4
In the meantime, grate the zest from one of the oranges and squeeze the juice from both.
Step 5
10 minutes before the lentils are done, add the couscous, salt, pepper, orange juice, and zest to the soup.
Step 6
After 10 minutes, remove from heat and let it sit covered for at least another 5 minutes.
