Ingredients
- Lentils - 1 cup
- Chicken Broth - 1 qt
- Onion - 1 head
- Olive Oil - 2 tablespoons
- Dried Barberry - 1 teaspoon
- Dried Rosemary - 0.5 teaspoon
- Lemon - 1 piece
- Salt - to taste
- Ground Black Pepper - to taste
- Greens - 1 bunch
Step by Step guide
Step 1
Rinse the lentils and soak them in water.
Step 2
Prepare the vegetable broth (water + carrot + onion + celery + a bunch of parsley + black pepper + bay leaf).
Step 3
In a deep saucepan, sauté the chopped onion in olive oil until golden brown.
Step 4
Pour the vegetable broth into the saucepan, add the lentils, draining the soaking water first. Cook the lentils until fully tender. Five minutes before finishing, season with salt and pepper, and add the dried herbs.
Step 5
Chop your favorite greens. It is preferable to use only one type of green: either dill, parsley, or cilantro.
Step 6
Remove the soup from heat and add the greens.
Step 7
Squeeze the juice of half a lemon. Cut the other half into thin wedges.
Step 8
Ladle the soup into deep bowls. Serve with a lemon wedge and natural yogurt if desired.
