Ingredients
- Lentils - 17.6 oz
- Olive Oil - 2 spoons
- Carrot - 2 pieces
- Cilantro - 1 bunch
- Onion - 2 heads
- Garlic - 3 cloves
- Red Curry Powder - 4 spoons
- Chicken Broth - 2 qt
- Yogurt powder - 2 glasses
- Mint - 1.8 oz
- Basil - 1.8 oz
Step by Step guide
Step 1
Heat oil in a deep saucepan and add finely chopped onions, garlic, and carrots. Sauté for about ten minutes over medium heat, until the vegetables are soft.
Step 2
Add curry powder, stir, and then add the dry lentils. Keep on heat for a couple of minutes, then pour in the broth. Cover with a lid and cook for one hour and fifteen minutes, stirring occasionally. The lentils should become tender, and the mixture should not thicken too much. If needed, you can add more broth. Towards the end, season with salt and pepper to taste.
Step 3
In a blender, combine the yogurt with the chopped mint, cilantro, and basil. Use a spoonful of the herb yogurt to garnish the bowl of soup.
