Ingredients
- Red Lentils - 10.6 oz
- Onion - 1 head
- Olive Oil - 2 tablespoons
- Potato - 5.3 oz
- Vegetable Broth - 13 fl oz
- Peeled Tomatoes - 10.6 oz
- Tomato Sauce - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- TABASCO® - 1 teaspoon
- Chopped Parsley - 4 tablespoons
Step by Step guide
Step 1
Sort the lentils and rinse them in cold water several times. Peel and finely chop the onion. Wash, peel, and dice the potato. In a heavy-bottomed pot, heat the olive oil and sauté the onion with the lentils. Add the potato, pour in the vegetable broth, and gently stir. Cook covered for about 15 minutes.
Step 2
Slice the tomatoes and stir them into the pot with the soup. Add the tomato sauce and bring to a boil. Continue to cook the soup for a few minutes over low heat. Season with salt, pepper, add TABASCO sauce, and mix well.
Step 3
Ladle the finished soup into serving bowls and sprinkle with chopped parsley.
