Lentil Soup with Vegetables
Ingredients
- Olive Oil - 2 tablespoons
- Carrot - 1 piece
- Celery stalk - 1 stalk
- Shallot - 1 head
- Water - 6 cups
- Green-brown lentils - 1 cup
- Bulgur - ½ cup
- Red Wine Vinegar - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a medium pot, heat the oil over low heat.
Step 2
Add the carrot, celery, and shallot, and sauté for about 6 minutes until each ingredient is tender.
Step 3
Cook the lentils separately until they are soft – about 20 minutes.
Step 4
Cook the bulgur separately until it is also tender – about 5–7 minutes.
Step 5
Combine everything, drizzle with vinegar to taste, and add salt and pepper.
Step 6
Season with oil and serve.
