Ingredients
- Green Butter - 28.2 oz
- Butter - 3 tablespoons
- Wheat Flour - 2 tablespoons
- Milk - 1 qt
- Salt - to taste
- Cream - 8 fl oz
Step by Step guide
Step 1
Select and wash the lettuce leaves, then immerse them in boiling water for 1-2 minutes; drain in a sieve and let the water drain, then pass through a meat grinder with a fine mesh.
Step 2
In a separate pot, lightly toast the flour with 2 tablespoons of butter, dilute with 5-6 cups of hot milk, bring to a boil, mix with the lettuce, and cook for 15-20 minutes.
Step 3
Then add salt and butter to taste, pour in another cup of hot milk or cream, and stir. Serve the soup with croutons on the plate.
