Ingredients
- Chum Salmon Caviar - 4 lbs
- Coarse Salt - 3.5 oz
- Sugar - 3.5 oz

Prepare all the ingredients.
Step 2
Remove the head from the chum salmon and fillet the fish. The head and bones can be saved for broth; in this case, remove the eyes and gills.
Step 3
Remove all the bones from the fillet using tweezers.
Step 4
Mix the sugar and salt together.
Step 5
Place the salmon fillet on a flat dish skin side down, and sprinkle the fillet with the salt and sugar mixture so that the fish is covered with a thick layer. You can use more salt and sugar, but maintain the 1:1 ratio.
Step 6
Put the salmon in the refrigerator for 12 hours.
Step 7
After the time has passed, rinse the fish and return it to the refrigerator for another 12 hours.
Step 8
Store in a tightly sealed container for up to two weeks.
Step 9
Serve sliced thinly.
