- Smoked haddock fillet - 2 lbs
- New Potatoes - 28.2 oz
- Spanish onions - 5 heads
- Malt Vinegar - 4 spoons
- Meyer Lemon Juice - 4 spoons
- Butter - 3.5 oz
- Salt - 3.5 oz
- Sugar - 1.8 oz
- Dill - to taste
Step by Step guide
Step 1
Take 4 fillets of fish, each weighing about 250 grams. Rub them with a mixture of sugar and salt, place them in a bowl, cover with plastic wrap, and leave in the refrigerator for 24 hours.
Step 2
Boil the potatoes. Important point: salt the water, keeping in mind that the fish will also be quite salty. Once the water comes to a boil, cook the potatoes for about 15 more minutes, until they are tender.
Step 3
Combine the wine vinegar and lemon juice. Slice the onion into thin half-rings and let it marinate in this mixture until serving.
Step 4
Drain the water from the pot with the potatoes and immediately add the butter, gently stirring to combine.
Step 5
Slice the fish into pieces about 2 cm thick, arrange them on a plate with the onions and potatoes, garnish with dill, and serve.
