Lightly Salted Salmon with Blueberries
Ingredients
- Smoked haddock fillet - 2 lbs
- Sugar - 2.6 oz
- Salt - 2.6 oz
- Fresh Berries - 5.3 oz
- Crème de Cassis - 1 tablespoon
- Ground Black Pepper - 0.2 oz

Prepare all the ingredients.

Rinse the finished fillet to remove any remaining berries and spices, pat dry, and store in a tightly sealed container in the refrigerator for up to 2 weeks.

Serve the lightly salted salmon, slicing it into thin pieces.

Remove all bones from the salmon fillet using tweezers.

Cut the fillet in half across.

Blend the blueberries with the liqueur in a blender.

Spread this puree on the flesh side of the fish fillet.

Mix sugar, salt, and pepper.

Also distribute the spice mixture on the flesh side of both fillets.

Place one fillet on top of the other, flesh to flesh. Leave at room temperature for 3 hours.

Then flip the pair — the fillet that was on top should now be on the bottom. Refrigerate overnight.
