Ingredients
- Salt - 35.3 oz
- Coho salmon fillet - 24.7 oz
- Concentrated Lemon Juice - 1 tablespoon
- Soy Sauce - 1 teaspoon
- Red Long Chili Peppers - 0.2 oz
- Honey - 0.4 oz
Step by Step guide
Step 1
Fillet the fish and remove all bones with tweezers.
Step 2
Rinse the fillet and pat it dry. Take a container, pour 100 grams of salt at the bottom, and place the sockeye salmon fillet skin-side down. Completely cover the fish with salt so that it is fully coated. Place it in the refrigerator for one day.
Step 3
After one day, take the fish out of the refrigerator, remove the fillet from the salt, rinse it, and place it in a bowl with water and ice for one hour. Later, take the fish out and pat it dry with a towel.
Step 4
Prepare the marinade: in a plate, add lemon juice, soy sauce, and ground pepper. Mix everything and coat the fish with it. Drizzle honey strands on top.
Step 5
Wrap the fish in parchment paper and foil, and place it in the refrigerator for one day. After one day, the fish is ready to eat.
