Lima Bean Puree with Cream and Cayenne Pepper

Ingredients

  • Water - 3 cups
  • Dried lima beans - 10.6 oz
  • Salt - 1¾ teaspoons
  • Cream - ½ cup
  • Butter - 6 tablespoons
  • Cayenne Pepper - ¼ teaspoon
  • Ground Black Pepper - ¼ teaspoon

Step by Step guide

Step 1

Place the beans in boiling salted water, cover with a lid, and cook for 15 minutes until tender.

Step 2

Transfer the beans with the broth to a food processor and blend until smooth. Then transfer to a sieve and press through into a large bowl.

Step 3

In a small saucepan, heat the cream and butter over medium heat until the butter melts. Then add to the bean puree along with the cayenne and black pepper and the remaining 0.75 teaspoons of salt. If the puree is too thick, thin it with additional warm cream to your desired consistency.
