Ingredients
- Drinking Alcohol - 17 fl oz
- Lemon - 8 pieces
- Sugar - 17.6 oz
- Water - 22 fl oz
Step by Step guide
Step 1
Pour boiling water over the lemons and wipe them. This is necessary to wash off the wax they are treated with. Then, peel the zest from the lemons. Be careful not to touch the white layer, as it will taste bitter.
Step 2
Place the zest in an airtight container and cover it with alcohol. Let the zest steep in a dark, cool place for about 5 days. Shake it daily about 2 times.
Step 3
After the zest has steeped, strain the alcohol, squeeze the zest, and proceed to make the syrup.
Step 4
For the syrup, combine 500 grams of sugar with 650 ml of water and put it on the heat. You can add the remaining zest to the mixture for extra aroma. Heat the syrup, stirring occasionally until the sugar dissolves. Do not bring it to a boil. Then remove from heat and let it cool to room temperature.
Step 5
Mix the resulting syrup with the alcohol infusion. The mixture will become cloudy, but this is normal as the essential oils from the lemon are released into the alcohol. Add the juice of 2 lemons.
Step 6
Let the resulting drink steep in the refrigerator for 5 days, shaking it daily.
Step 7
Before serving, chill the limoncello in the freezer.
