Lithuanian Beet Kefir Soup
Ingredients
- Beetroot - 1 piece
- Cucumbers - 4 pieces
- Chicken Eggs - 5 pieces
- Dill - 3 bunches
- Ground Black Pepper - to taste
- Fat-Free Kefir - to taste
- Potatoes - 4 pieces
- Salt - to taste
Step by Step guide
Step 1
Boil the medium-sized beetroot, cool it down, and grate it on a coarse grater.
Step 2
Grate or finely chop the 4 cucumbers and add them to the beetroot.
Step 3
Boil 5 eggs hard, chop them finely, and add them to the vegetables.
Step 4
Take 3 good bunches of dill, chop it, and generously sprinkle it over the mixture.
Step 5
Add salt and pepper.
Step 6
Add kefir. The amount of kefir added depends on the desired thickness of the soup.
Step 7
Serve the boiled hot potatoes on a separate plate.
