Lithuanian Cold Borscht
Ingredients
- Beetroot - 3 pieces
- Egg white - 4 pieces
- Cucumbers - 2 pieces
- Scallions - 1 bunch
- Dill - 1 bunch
- Sour Cream - 4 tablespoons
- Salt - to taste
- 1% Kefir - 1 qt
Step by Step guide
Step 1
Take the beetroot, boil it, and let it cool.
Step 2
Then peel it and grate it into a pot. Add the peeled and diced eggs.
Step 3
Next, dice the cucumbers and add them to the pot.
Step 4
Finely chop the dill and green onions.
Step 5
Add 3–4 tablespoons of sour cream and season with salt to taste. Mix everything well.
Step 6
Then add the kefir and a bit of cooled boiled water.
Step 7
Place in the refrigerator for about an hour to chill and enhance the flavor. Serve cold.
