Ingredients

  • Beef Kidneys - 17.6 oz
  • Onion - 2 pieces
  • Pork fat - 24.7 oz
  • Green peppercorns - 1 tablespoon
  • Ground clove - 2 pieces

Step by Step guide

Step 1

Line the bottom and sides of a pot or saucepan suitable for oven use with thinly sliced pork fat.

Step 2

Cut the liver into small pieces and place it in the saucepan. Top with the chopped onion, pepper, and cloves. Cover everything with pork fat.

Step 3

Preheat the oven to 356°F and leave the saucepan for 2 hours.

Step 4

Remove the saucepan, carefully take out the onion, pepper, and cloves. Grind the remaining liver and pork fat in the saucepan, season with salt and pepper to taste. Let it cool.
