Description
Kaurma is a dish made from meat offal, primarily liver. It can also include lungs, heart, and kidneys. Instead of lamb liver, you can use pork liver and substitute lamb fat with pork fat.
Ingredients
- Lamb stomach - 1 piece
- Onion - 6 heads
- Tomatoes - 6 pieces
- Cilantro - to taste
- Lamb Fat Netting - 1 tablespoon
- Vegetable Oil - 2 tablespoons
- Parsley - to taste
- Tarragon - to taste
- Ocean salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Quickly fry the liver, cut into large pieces, in vegetable oil until a crust forms.
Step 2
Separately, fry the finely chopped onion in the fat until it becomes soft and translucent.
Step 3
Pour boiling water over the tomatoes, remove their skins, and mash them thoroughly with a spoon until they turn into a liquid puree. Strain the tomatoes through a sieve.
Step 4
Place the onion and liver in a pot, mix, pour in the tomato puree, season with salt and pepper, and simmer on low heat for about an hour.
Step 5
Transfer to a serving dish and sprinkle with finely chopped cilantro, parsley, and tarragon.
