Ingredients
- Chicken Liver - 10.6 oz
- Onion - 1 piece
- Butter - 1.8 oz
- Potato protein - 1 teaspoon
- Salt - to taste
- Bay leaf - 1 piece
- Spices - 2 pieces
- Ground Nutmeg - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Clean the liver from veins and ducts, carefully remove any gallbladders to avoid bitterness affecting the liver (this bitterness may give a bitter taste to the dish), rinse thoroughly under running water, and soak in milk for 1 hour.
Step 2
Remove the liver from the milk, rinse again, cover with water, add salt to taste, add the onion cut into 4 pieces, bay leaf, and allspice, bring to a boil over medium heat, and once boiling, simmer for another 20 minutes on low heat.
Step 3
After the liver is cooked, strain it, remove the pepper and bay leaf, place in a blender, and blend for 1-2 minutes until visible chunks are eliminated.
Step 4
Add nutmeg, ground black pepper, starch, and butter to the mixture, mix well; if the mixture is too thick, you can add a couple of tablespoons of the broth in which the liver was cooked.
Step 5
Place in a suitable container and cool in the refrigerator.
