  • Sugar - 0.4 oz
  • Vegetable Oil - 3 fl oz
  • Dry yeast - 0.2 oz
  • Butter - 0.7 oz
  • Bacon - 17.6 oz
  • White Beans - 17.6 oz
  • Spanish onions - 7.1 oz
  • Onion - 7.1 oz
  • Ground coriander - 0 oz
  • Uchiko Suneli - 0 oz
  • Ground Black Pepper - 0 oz
  • Salt - 0.7 oz

Step by Step guide

Step 1

For the dough, thoroughly mix the flour, sugar, yeast, and 11 grams of salt. Pour the milk into a saucepan, add the butter, and gently heat it without bringing it to a boil: the butter should melt. Pour the milk into the flour, add 10 grams of vegetable oil, and knead well. Cover the prepared dough with plastic wrap and let it rise for about forty minutes.

Step 2

Sort the beans, rinse them, place them in a pot, cover with water, and simmer until they are completely tender. Then, drain in a colander and let them cool slightly. Transfer to a bowl and mash.

Step 3

Chop the onion into small cubes and sauté in 100 grams of vegetable oil over low heat, stirring, until soft. Drain in a colander, cool, and mix with the beans. Season with salt and add spices to taste, mixing thoroughly.

Step 4

Cut half of the bacon into small pieces. Roll out one-fifth of the dough, place one-fifth of the beans and one-fifth of the chopped bacon on top. Gather the edges of the dough in a circle, seal it, flip the lobiani over, and roll it out evenly with a rolling pin. Place the pie in a round baking dish, bake at 392°F for ten to fifteen minutes, then remove it and add one-fifth of the remaining strips of bacon, and bake for another five minutes.

Step 5

Do the same with the remaining dough, beans, and bacon.
