Lobio with Walnuts
Ingredients
- Dried Red Beans - 10.6 oz
- Walnuts - 3.5 oz
- Onion - 2 heads
- Garlic - 5 cloves
- Cilantro - 1 bunch
- Vegetable Oil - 2 tablespoons
- Khmeli-suneli - 2 teaspoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Soak the beans in cold water for 1 day. Rinse, cover with water, and boil until tender (about 2 hours). Drain the broth into a separate container.
Step 2
Chop the onion and 4 cloves of garlic and sauté in vegetable oil until golden. Add khmeli-suneli 5 minutes before it's done. Remove from heat and let cool slightly.
Step 3
Blend the walnuts with the sautéed onion and garlic.
Step 4
Wash the cilantro, finely chop it, and grind it in a mortar with a clove of garlic and salt until juice is released.
Step 5
Mix the beans with the walnut mixture and cilantro. Season with salt and pepper, and mix well. If the lobio is too thick, add a little of the bean broth. Let it sit for 1 hour.
