Ingredients
- Butter - 1.1 oz
- Shallot - 5 pieces
- Carrot - 1 piece
- Lobster tails - 1 piece
- Cayenne Pepper - a pinch
- Paprika - ½ teaspoon
- Brandy - 4 tablespoons
- Meyer Lemon Juice - 0 fl oz
- Dry White Wine - 10 fl oz
- Fish Oil - 1½ liters
- Long-Grain Rice - 2.1 oz
- 10% cream - 3 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
- Bay leaf - 2 pieces
Step by Step guide
Step 1
Boil the lobster, remove the meat from the shell (keeping one large piece of shell for later), and cut into pieces.
Step 2
Chop the carrot and shallots, place them in a pot with melted butter. Sauté for about 5 minutes.
Step 3
Pour in the brandy, lemon juice, season with spices, and cook until the mixture significantly reduces in volume.
Step 4
Add the stock, wine, place the remaining shell in the pot, add the rice, and cook for about 15 minutes over medium heat. Then the shell can be removed and discarded.
Step 5
Season with salt and pepper, add the lobster, and cook for about 5 minutes.
Step 6
Transfer the soup to a blender, puree, and strain through a sieve.
Step 7
Add cream to the bowl with soup and serve.
