Lobster with Mornay Sauce
Ingredients
- Lobster tails - 1 piece
- Milk - 10 fl oz
- Onion - 1 head
- Bay leaf - 1 piece
- Green peppercorns - 6 pieces
- Butter - 1.1 oz
- Wheat Flour - 2 tablespoons
- Whipped Cream - 2 tablespoons
- Nutmeg - a pinch
- Paprika - a pinch
- Cheshire Cheese - 2.1 oz
Step by Step guide
Step 1
Boil the lobster. Using a sharp knife, cut it in half lengthwise along with the shell. Remove the meat from the tail and body. Clean the shell of any innards. Cut the meat into small pieces, cover, and refrigerate. Wash the shell and dry it.
Step 2
In a small saucepan, pour in the milk, onion, bay leaf, and pepper. Bring to a boil, remove from heat, cover, and let sit for 15 minutes. Strain.
Step 3
Melt the butter in a large skillet, add the flour, and sauté for 1 minute. Remove from heat and gradually stir in the milk. Return to heat, bring to a boil, and allow to thicken while stirring constantly. Reduce heat and simmer for another minute. Add the cream, nutmeg, salt, and black pepper.
Step 4
Place the lobster meat into the sauce and heat over low heat until warmed through. Spoon the mixture into the shell and sprinkle with cheese. Place under the broiler for 2 minutes. Sprinkle with paprika.
