Lorraine Quiche with Gruyère
Ingredients
- Wheat Flour - 8.8 oz
- Butter - 4.2 oz
- Salt - a pinch
- Farm fresh eggs - 3 pieces
- Gruyère cheese - ¾ cup
- Cream - ½ cup
- Milk - ½ cup
- Cayenne Pepper - to taste
- Nutmeg - ¼ teaspoon
- Green peppercorns - to taste
- Bacon - 3 pieces
- Scallions - to taste
Step by Step guide
Step 1
Preheat the oven to 392°F.
Step 2
In a bowl, rub the flour, butter, and salt together by hand. Add 1 egg and 1 tablespoon of ice water. Knead the dough.
Step 3
Form the dough into a ball and place it in the refrigerator for 1 hour.
Step 4
Chop and fry the bacon and let it cool.
Step 5
Grate the cheese. In a deep bowl, beat the remaining eggs, then add the cheese, cream, milk, pepper, nutmeg, salt, and pepper. Add the bacon to the mixture.
Step 6
Roll out the dough into a circle about 30 cm in diameter and place it in a round baking dish greased with butter and dusted with flour. Trim the excess dough and chill for 30 minutes. Then prick the dough with a fork, cover it with parchment paper, and place beans or dry beans on the paper to prevent the dough from rising. Place the dish in the oven for 20 minutes. Remove the paper and beans and bake for another 15 minutes.
Step 7
Reduce the oven temperature to 338°F.
Step 8
Pour the filling into the dish and bake for about 20 minutes. Garnish the quiche with green onions.
