Low-Calorie Daily Cabbage Soup with Chicken Offal Broth
Ingredients
- Poultry - 14.1 oz
- Onion - 5 pieces
- Sauerkraut - 17.6 oz
- Dried Chinese mushrooms - 1.4 oz
- Ground Oats - 2 tablespoons
- Olive Oil - 3 tablespoons
- Salad Potatoes - 2 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Don't pay attention to the specified time: everything is variable, it will be much faster in a pressure cooker, but I still prefer it to be like from a Russian oven. I like to do this overnight so it's ready for tomorrow's lunch.
Step 2
In a three-liter pot, place the chicken offal, fill with water (NOT to the top, leave room for the cabbage). Cook a light chicken broth. To minimize calories, I use hearts or gizzards. Breasts can be used as well – there will be nothing but flavor (considering that 240 ml of chicken broth is 12 kcal). So: fill with water, bring to a boil, carefully skim off the foam...
Step 3
...then salt and pepper to taste, add finely chopped onion (a small onion or equivalent) – for flavor and clarity – and simmer for about an hour on low heat, covered.
Step 4
While this is cooking, finely chop 3-4 large onions, place them in a frying pan with olive oil (medium heat) and sauté until translucent.
Step 5
Add the sauerkraut to the onions (if it's very sour – first place it in a colander and rinse with cold running water), stir, cover tightly with a lid, and sauté on low heat until light brown (this takes about an hour to an hour and a half). Stir occasionally. When the liquid evaporates – add more from the kettle.
Step 6
Meanwhile, soak the dried mushrooms in boiling water, cover with a lid, and let sit for about 15 minutes. Remove and chop (as you like, I prefer larger pieces). Strain the resulting broth and DO NOT discard it – it will be useful, we will add it at the end when assembling the soup, or to the cabbage while it is frying, instead of another portion of water.
Step 7
When the broth is ready – remove the chicken offal, set it aside in a separate dish, cover with a lid (later, when it cools, we will put it in the refrigerator). It won't be needed until morning :)
Step 8
Assemble the soup: the sautéed cabbage (it should not be pale!) with onions is added to the broth, add the mushroom broth and, excuse me...
Step 9
...the oats – for thickness and binding (for healthy people, this is achieved with crumbly potatoes). The oats will completely dissolve later, it won't be noticeable at all.
Step 10
Add the chopped mushrooms (they can also be added earlier, before the cabbage, and cooked with the broth)
Step 11
Add coarsely chopped potatoes (as much as you can considering the carbohydrate count; you can also skip this). If there is too much broth during assembly – ladle the excess into a bowl: it will be useful in the morning when you take out the soup and see that some has evaporated.
Step 12
Bring to a boil...

...and remove, tightly covering with a lid, into the oven, preheated to 180-200°C. Immediately reduce the temperature to 105-110°C (the soup will hardly boil, just small bubbles will appear) and leave until morning (or for about 4-5 hours). In general, I immediately go to sleep after this :)

"Morning paints with a gentle color..." :) We woke up :) We take out the pot (do you see how the soup has become rosy on top? This is exactly the flavor we were aiming for – it won't turn out like this in a pressure cooker, it will just fall apart! And the oats, by the way, have completely dissolved!), add the portioned chopped chicken offal, if it has evaporated – add the previously collected "extra" broth, bring to a boil on low heat (to heat the meat evenly) and return to the oven, which we IMMEDIATELY turn off – let it cool in the oven.

That's it – for those who had a village Ukrainian grandmother with homemade pork (God, turn this pig into a crucian carp!), they will understand me. Completely rustic, if anyone remembers the taste of childhood. But in terms of calories and sugars – fully in the modern minimalist style :) :)
