Mackerel in Citrus Marinade
Ingredients
- Canned Mackerel in Oil - 5 pieces
- Orange Bell Peppers - 3.5 oz
- Lemon - ½ piece
- Spanish onions - 3.5 oz
- Oranges - ½ piece
- Wheat Flour - 2 tablespoons
- Olive Oil - 3 fl oz
- Vegetable Oil - 2 fl oz
Step by Step guide
Step 1
Remove all bones from the mackerel. Season with salt and pepper, coat in flour, and fry on both sides in vegetable oil until golden brown. Allow to cool.
Step 2
Cut the pepper into strips. Thinly slice the onion into half rings. Grate the zest of the lemon and orange.
Step 3
Squeeze the juice from the orange.
Step 4
Mix everything together, add the fish, and pour in the olive oil. Leave in the refrigerator overnight.
