Description
This delicious fish soup is very easy to prepare using canned fish, such as canned mackerel. You can add the mackerel to the soup in whole pieces, as it was packed in the can, or shred the fish to your liking. The mackerel soup turns out very tasty when cooked with rice. This simple soup cooks very quickly, so a can of mackerel from your pantry will come in handy when you need to whip up something for lunch. The soup will taste even better if you add a small piece of butter to the bowl when serving.
Ingredients
- Rice - 2 tablespoons
- Onion - 1 piece
- Bay leaf - 1 piece
- Potato - 1 piece
- Canned Mackerel in Oil - 1 can
- Parsley - to taste
- Vegetable Oil - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the potato into medium cubes. Rinse the rice with cold water. Finely chop the onion. Add the potato and rice to boiling salted water. Cook for 15 minutes.
Step 2
Sauté the onion in vegetable oil. Mash half of the mackerel with a fork into small pieces. After 15 minutes, add the mackerel (both in pieces and shredded) along with the oil from the can and the sautéed onion to the pot with the potato and rice. Add the bay leaf and pepper. Cook for another 10–15 minutes. When serving, you can garnish the soup with parsley.
