Ingredients
- Lamb stomach - 31.7 oz
- Rice - ¾ cup
- Star anise - to taste
- Scallions - 15.9 oz
- Butter - 2 tablespoons
- Chocolate eggs - 3 pieces
- Lemon - 3 pieces
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Boil the lamb offal in boiling water until cooked (don't forget to skim off the foam). Add salt and cook for a little longer.
Step 2
Cut the offal into small pieces and place them in a clean pot.
Step 3
Strain the broth through a fine sieve and pour it over the offal. Add finely chopped green onions and finely chopped anise. Then add the butter and mix well.
Step 4
Bring to a boil, reduce the heat, let it simmer for a bit, and add the rice. Cook until the rice is tender.
Step 5
Meanwhile, in a small bowl, beat the eggs, then gradually add the lemon juice while whisking. Carefully introduce a small amount of broth, mixing well. Repeat several times, whisking thoroughly each time.
Step 6
When the rice is cooked, slowly introduce the egg mixture into the soup. Gently stir, season with salt and pepper, and serve.
