In Moldova, mămăligă is enjoyed with feta cheese, but it can also be crumbled into milk, dipped in sauce, soaked up salad juices, or drizzled with sweetened condensed milk. There are countless ways to enjoy it, and even the most inexperienced cooks can master its preparation.
Ingredients
- Coarse Cornmeal - 5 oz
- Water - 20 fl oz
- Salt - 1 tablespoon
- Butter - 0 oz
- Feta cheese - 5 oz
Step by Step guide

Prepare the necessary ingredients.

Bring the water to a boil and add salt.
Step 3
Sift a tablespoon of corn flour into the pot. Stir and bring to a boil.
Step 4
Then sift all the remaining flour into the pot, stirring constantly to avoid lumps.

When the porridge thickens, add butter and stir well.

Simmer for another 15 minutes, stirring constantly.
Step 7
To check if the polenta is ready, insert a wooden spoon into the center of the dish and pull it out quickly. If nothing sticks to the spoon, the polenta is almost ready.

Reduce the heat to low, cover the pot with a lid, and let it sit for a few minutes to allow the polenta to cook through.
Step 9
Run a spoon, moistened with water, along the walls of the pot, cover it with a board, and then flip the pot over.
Step 10
The proper mamaliga should take the shape of the pot. Serve it with brinza cheese.
