Description
For this recipe, it's better to use smaller mandarins.
Ingredients
- Mandarins - 2 lbs
- Water - 1 qt
- Sugar - 2 lbs
- Cinnamon - 1 piece
- Star anise - 2 pieces
- Cardamom - 3 pieces
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Pierce the mandarins in several places all over the surface with a toothpick, but not too often, so the skin doesn't break during cooking.
Step 3
In a pot, combine sugar and water and heat until the sugar dissolves.
Step 4
Place the mandarins in the syrup, add the cinnamon stick, star anise, and cardamom (it's better to put the spices in a cheesecloth bag for easier removal). Bring to a boil and simmer on low heat for 15 minutes.
Step 5
Remove the spices from the syrup and continue to simmer the mandarins on low heat for 3 hours.
Step 6
Sterilize jars and lids over steam for 20 minutes.
Step 7
Transfer the mandarins to the jars and pour the syrup over them.
Step 8
Seal the jars, let them cool completely, and store in a dark, cool place.
Step 9
Serve the mandarins in syrup with tea or use as an ingredient for various desserts.
