Ingredients
- Cauliflower - 2 lbs
- Water - 1 qt
- Yellow Beets - 3 pieces
- Marinated cherries - 17.6 oz
- Salt - to taste
- Sugar - to taste
- Hibiscus - 0.4 oz
- Mustard Greens - 1 bunch
- Cilantro - 1.8 oz
- Tarragon - 0.7 oz
- Parsley - 1.8 oz
- Truffle Oil - to taste
- Courgette - 1 piece
Step by Step guide
Step 1
Wash the cauliflower and slice it into medium-thick slices.
Step 2
Wash the beets and peel them. Chop them roughly.
Step 3
Prepare the brine. Pour water into a pot and place it on the heat.
Step 4
Once the water boils, add hibiscus, cherries, beet greens, and pieces of beet. Add salt and sugar to taste.
Step 5
Cook the marinade for 2 minutes.
Step 6
Pour the brine over the cauliflower and place it in a dark place for 2 days.
Step 7
Once the cauliflower is marinated, arrange it on plates.
Step 8
Prepare a tartar with tarragon, cilantro, and parsley. Wash the herbs well and chop them finely.
Step 9
Dice the zucchini into small cubes and mix it with the herbs.
Step 10
Dress with truffle oil. The tartar is ready.
Step 11
Place the tartar on top of the marinated cauliflower and serve.
