Preheat the grill.

Slice the eggplants into thin pieces and brush both sides with 2 tablespoons of olive oil. Lay a sheet of foil on the grill and arrange the eggplants in a single layer on top. Grill until golden brown, about 8-12 minutes.
Step 3
In a bowl, mix the vinegar, finely chopped mint, capers, 0.25 teaspoons of salt, 0.5 teaspoons of pepper, and the remaining oil. Add the warm eggplants and mix well. Let marinate for 20 minutes.
