Description

An easy brine that works well with any mushrooms, whether seasonal or available at markets year-round.

Ingredients

  • Fresh Mushrooms - 9 lbs
  • Salt - 4.8 oz
  • Malt Vinegar - 1 qt
  • Garlic - 6 cloves
  • Bay leaf - 8 pieces
  • Ground clove - 16 pieces

Step by Step guide

Step 1

Thoroughly wash the mushrooms and place them in a pot. Add 125 ml of salt and cover with water, bring to a boil, and cook for 25 minutes. Drain and cool.

Step 2

In a small pot, pour in the vinegar, add the remaining salt and garlic. Bring to a boil.

Step 3

Place the mushrooms in sterilized jars, then pour in the marinade. Add 1 bay leaf and 2 cloves to each jar. Seal tightly.
