Marinated shrimp with mango and chili salsa

Ingredients

  • Meyer Lemon Juice - 4 tablespoons
  • Olive Oil - 4 tablespoons
  • Ocean salt - 1 teaspoon
  • Dill - 3 tablespoons
  • Peeled Cooked Shrimp - 2 lbs
  • Arugula - 5.3 oz
  • Mango - 15.9 oz
  • Mild Chili Spice - 1 piece
  • Spanish onions - 1 head
  • Citrus Zest Mix - 1 tablespoon

Step by Step guide

Step 1

In a large bowl, mix lemon juice, olive oil, sea salt, and finely chopped dill. Add the shrimp, mix well, cover, and refrigerate for 1 hour.

Step 2

Preheat the grill.

Step 3

Grill the shrimp for 2-4 minutes, turning once, until pink but still tender to the touch. Transfer to a plate and let cool.

Step 4

In a bowl, combine diced mango, finely chopped onion, chili, and lemon zest.

Step 5

Arrange arugula leaves on plates, place a small amount of salsa on top, and then add the shrimp. Season with salt and serve immediately.
