Marinated Smelt
Ingredients
- Smelt - 2 lbs
- Salt - to taste
- Vegetable Oil - to taste
- Sugar - 3 tablespoons
- Onion - 1 head
- Green peppercorns - 8 pieces
- Bay leaf - 2 pieces
- Wheat Flour - to taste
- 9% Vinegar - 5 fl oz
Step by Step guide
Step 1
Wash the smelt, clean it, coat it in a mixture of flour and salt, and fry in vegetable oil until cooked. Usually, 5–7 minutes on each side is sufficient.
Step 2
Peel the carrot and onion, slice them into rings, place them in a pot, and cover with 1 liter of water. Put it on the stove, add sugar and salt, bring to a boil, add vinegar, pepper, and bay leaves, then remove from heat. Taste the marinade and, if necessary, adjust with more sugar/vinegar/salt according to your preferences.
Step 3
Pour the hot marinade over the smelt, and top with the carrot and onion.
Step 4
Leave to marinate overnight. The next day, you can enjoy.
