Ingredients
- Smelt - 2 lbs
- Wheat Flour - to taste
- Onion - 2 pieces
- Carrot - 2 pieces
- Green peppercorns - 5 pieces
- Salt - 2 tablespoons
- Sugar - 4 tablespoons
- Vinegar essence - 5 tablespoons
- Bay leaf - 1 piece
Step by Step guide
Step 1
Clean the smelt by removing the head and entrails.
Step 2
Slightly salt, coat in flour.
Step 3
Fry the smelt in vegetable oil.
Step 4
Transfer the smelt to a bowl and pour over the marinade.
Step 5
For the marinade: peel and slice two onions into thin half-rings.
Step 6
Peel two large carrots and grate them on a coarse grater.
Step 7
Place the onion and carrot in a pot, add 1 liter of water, add pepper, salt, sugar, bay leaf, and put on the heat.

Bring to a boil and cook for 1-2 minutes.

Add vinegar, wait for it to boil, and remove from heat.

Pour the hot marinade over the fried smelt.
