Description

A hearty soup made by Spanish fishermen, primarily popular in the northern part of the country. Translated from Basque, "marmitako" means "from the pot"—local fishermen didn’t worry about the appearance of the dish and tossed in whatever they had on hand: tuna, peppers, garlic, potatoes, and of course, wine.

Ingredients

  • Onion - 2 heads
  • Tuna - 17.6 oz
  • Mild Chili Spice - 3 pieces
  • Orange Bell Peppers - 1 piece
  • Garlic - 2 cloves
  • Potato - 21.2 oz
  • Dry White Wine - 2 fl oz
  • Olive Oil - 2 fl oz
  • Passata Tomato Sauce - 1.8 oz
  • Wheat Flour - 0.7 oz
  • Paprika - 0.2 oz
  • Fish Oil - 1 qt
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Chop the onion into small cubes.

Finely chop the chili, removing the seeds. Mince the garlic.

Cut the bell pepper into large pieces.

Cut the tuna into large pieces, and season each piece with salt and pepper.

In a deep skillet or heavy-bottomed pot, heat olive oil and sauté the onion until it becomes translucent.

Add the chili, bell pepper, and garlic. Sprinkle in a pinch of salt to help the vegetables release their juices, and sauté, stirring, for 5–7 minutes.

Add the flour and mix thoroughly to avoid lumps. Then add the tomato paste and sugar, and stir well.

Pour in the wine, stir, and let it simmer for a couple of minutes. Coarsely chop the potatoes and add them to the skillet.

Add paprika, pour fish broth or water over the vegetables, and simmer until cooked through. Season with salt to taste.

Add the tuna to the stew, stir, and cook for another 2 minutes. Serve.
