Ingredients
- Olive Oil - 3 tablespoons
- Onion - 2 heads
- Coarse Salt - to taste
- Salad Potatoes - 2 lbs
- Garlic - 4 cloves
Step by Step guide
Step 1
Peel the potatoes and cut them into medium-sized pieces. Peel and finely chop the onion. Finely chop the garlic.
Step 2
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the onion, season with salt, and cook, stirring, until caramelized, about 35–40 minutes.
Step 3
In a saucepan, combine the potatoes, garlic, and enough water to cover the potatoes completely. Add salt, bring to a boil, cover, and simmer on low heat until tender, about 15–20 minutes. Drain, reserving 1 cup of the water.
Step 4
Return the potatoes with garlic to the saucepan, add the remaining olive oil, season with salt, and mash with a potato masher, adding the reserved water to achieve the desired consistency.
Step 5
Then fold in the onions and serve immediately.
