Ingredients
- Lentils - 1 cup
- Onion - 2 heads
- Garlic - 5 cloves
- Mild Chili Spice - 1 piece
- Tomatoes - 2 pieces
- Scallions - 4 stalks
- Butter - 1 tablespoon
- Vegetable Oil - 2 tablespoons
- Turmeric - 1 teaspoon
- Grated Ginger Root - 1 teaspoon
- Cumin (Zira) - 2 tablespoons
- Salt - to taste
- Canned Tomatoes (Pelati) - 1 can
Step by Step guide
Step 1
In a large pot, add the lentils, chopped 1 onion, and 3 minced cloves of garlic, then pour in 3 cups of water.
Step 2
Bring to a boil and simmer on low heat with the lid on for 15 minutes.
Step 3
Add another 1 cup of water.
Step 4
Melt the butter in a pan and add the vegetable oil.
Step 5
Trim the white part of the green onion and chop it finely.
Step 6
Add the chopped 1 onion, 2 minced cloves of garlic, the white part of the green onion, and the finely chopped small chili, sautéing over medium heat while stirring constantly for 5 minutes.
Step 7
Add the can of diced tomatoes, turmeric, cumin, and ground ginger. Sauté for another 5 minutes.
Step 8
Combine the lentil soup with the sautéed onion mixture.
Step 9
Transfer half of the mixture to a blender and blend at maximum speed.
Step 10
Pour the blended mixture back into the soup and bring to a boil, then remove from heat.
Step 11
Prepare the garnish. Chop the tomatoes finely and add the chopped green onion.
Step 12
Serve the soup in bowls and add the tomatoes with onion to each bowl.
Step 13
Serve with pita or lavash.
