Meat Chowder

Ingredients

  • Water - 2 qt
  • Pork Blood - 10.6 oz
  • Salad Potatoes - 4 pieces
  • Onion - 1 piece
  • Carrot - 1 piece
  • Cream - 7 fl oz
  • Butter - 1.1 oz
  • Wheat Flour - 1 tablespoon
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Pour water into a pot and place it on the stove. We will add the vegetables to hot or even boiling water. This is necessary to reduce cooking time, which will preserve the beneficial properties of the ingredients.

Step 2

Cut all solid ingredients into nice cubes. Since we will blend only part of the soup with a blender, nicely cut vegetables will create an aesthetic appearance for the chowder.

Step 3

Add the potatoes to the hot water. I had to pour out some water to make room for the other ingredients. If you have a larger pot, you may not need to pour out any water.

Step 4

Stir the chowder, cover it with a lid, and let it cook.

Step 5

Meanwhile, place a piece of butter in a frying pan and sauté the meat under a lid for 3-4 minutes. Then, add salt to the meat. You can add a little pepper. Continue frying the meat until it has a golden crust.

Step 6

For those without a blender, you can substitute it with a fork and a sieve for preparing this chowder. Cooked vegetables can be easily mashed with them. It is important to cut the meat, trimming off all fat and sinews.

Step 7

Add the diced carrot to the meat and sauté for 2 minutes without a lid.

Step 8

Add the sautéed meat and carrot to our pot.

Step 9

I closed the window to better see the cooking process.

Step 10

In the same frying pan, sauté the onion. Then transfer it to a separate plate.

Step 11

To the onion, add some of the boiled potatoes and carrots from the pot for further blending (or using a fork and sieve).

Step 12

In the butter, sauté the tablespoon of flour until golden.

Step 13

Pour 150 g of cream into the pan with the sautéed flour. Mix everything well until smooth.

Step 14

Now we have in a separate plate some boiled potatoes and carrots, sautéed onion, and sautéed flour with cream. Add to this about one ladle of broth from the pot.

Step 15

Blend until smooth. Alternatively, you can manually mash everything with a fork and then strain it through a sieve.

Step 16

Add the resulting mixture to our pot. Mix everything well. Taste it. If needed, add more salt.

Step 17

Pour in the remaining cream – 50 g. Mix once more.

Step 18

Lower the heat and let it cook with the cream for another 3 minutes.

Step 19

Serve the chowder hot or warm in portions.
