Ingredients
- Veal Tenderloin - 2 lbs
- Onion - 5 heads
- Parsley - 1 bunch
- Cilantro - 1 bunch
- Basil - 1 bunch
- Sweet Pepper - 1 piece
- Carrot - 1 piece
- Adjika - to taste
- Uchiko Suneli - to taste
- Butter - 3.5 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Finely chop the cilantro, parsley, basil, bell pepper, onion, and garlic, and slice the meat into cutlets, just like you would for regular pork chops.
Step 2
Next, tenderize the meat well. In a bowl, combine the herbs, add salt, pepper, and adjika. If desired, sprinkle in various suneli spices. Mix everything thoroughly.
Step 3
Take a piece of meat, scoop some herbs, and spread them over the meat. Then, roll it up tightly into a small roulade. Place all the roulades in a heavy-bottomed pot. Add butter (or vegetable oil). Set over medium heat, bring to a boil, then reduce the heat and let it simmer for another hour.
Step 4
Serve with rice (or mashed potatoes), slices of tomato, sulguni cheese, and a drizzle of red tkhemali sauce.
