Description
A hearty soup featuring six different meats, from beef bones to ham. This is how solyanka is made at a local restaurant. The recipe was shared with us by Emily Smith, author of the book 'Culinary Journeys with Emily Smith: Tula'.
Ingredients
- Beef hoof - 7.1 oz
- Boiled Veal - 4.2 oz
- Beef tongue - 2.8 oz
- Semi-Smoked Sausage - 2.1 oz
- Sausages - 2.1 oz
- Ham - 2.1 oz
- Pickled Cauliflower - 5.6 oz
- Olives stuffed with lemon - 2.1 oz
- Onion - 7.1 oz
- Passata Tomato Sauce - 2.1 oz
- Vegetable Oil - 2 fl oz
- Salt - to taste
- Spices - 2 spoons
- Herbs - 0.7 oz
Step by Step guide
Step 1
Simmer a rich broth from beef bones for 1.5 to 2 hours.
Step 2
Cut the beef, tongue, sausage, hot dogs, ham, cucumbers, and olives into matchsticks. Dice the onion finely and sauté it in a pan with oil until golden brown, then add the tomato paste.
Step 3
Soak the sliced cucumbers in cold water and simmer for 30 minutes.
Step 4
Transfer the prepared ingredients into the ready broth, bring to a boil, season with salt, and add spices. Allow the solyanka to steep.
Step 5
When serving, add sour cream, a wedge of lemon, and sprinkle with chopped herbs.
