Ingredients

  • Orange Bell Peppers - 1 piece
  • Chicken Egg - 1 piece
  • Rack of Lamb - 17.6 oz
  • Onion - 1 piece
  • Garlic - 3 cloves
  • Pistachios - 1.2 oz
  • Mint - 0.3 oz
  • Italian chopped parsley - 0.2 oz
  • Ground Cumin - 1 teaspoon
  • Chili jam - 2 tablespoons
  • Pide bread - 4 pieces
  • Olive Oil - 1 tablespoon
  • Hummus - 7.8 oz
  • Arugula - 3.5 oz
  • Courgette - 1 piece

Step by Step guide

Step 1

Remove the seeds and core from the pepper and cut it into large pieces. Place them skin-side up under a preheated grill and roast until the skin is charred and blistered. Cool in a plastic bag, then peel and cut into thick strips.

Step 2

In a large bowl, mix the ground lamb, lightly beaten egg, chopped onion, crushed garlic, cumin, chili sauce, chopped pine nuts, finely chopped mint and Italian parsley, and chili sauce. Knead with your hands and roll the mixture into 4 roughly equal balls. Flatten them into patties about 9 cm in diameter.

Step 3

Heat olive oil in a skillet and fry the patties for 6 minutes on each side, or until browned and cooked through, then drain on paper towels.

Step 4

Slice the buns and toast them on both sides. Spread hummus on the cut side of the bun, then layer with arugula, roasted pepper, and cucumber cut into strips. Place the meat patty on top of the salad and cover with the other half of the bun.
